Red Label – Mild-aromatic Tilsiter

Red Label Tilsiter Switzerland is one of the classics among the semi-hard Swiss cheeses. Its mild, yet tangy and creamy taste is what makes it so unique. Whether it’s a morning snack or afternoon sandwich – Red Label Tilsiter simply tastes good. This makes it the star of many cheese recipes for cold and hot cuisine. Red Label Tilsiter is produced using traditional cheese-making methods in cheese dairies in the cantons of Thurgau, St. Gallen and in the Züri Oberland. The tangy flavour develops in the course of the three-month ripening period. From this point on, it is ready for consumption and goes on sale in the Swiss retail trade with the typical red label. It is produced by small, family-run cheese dairies with much loving care and expertise. Each wheel is made by hand and carefully tended in the cheese cellars during the ripening period. The natural brown-red rind comes from the wheels being regularly washed with brine and stored on wooden boards. The milk producers and cheesemakers know each other personally. Thanks to the short transport distances involved, the fresh raw milk is delivered to the cheese dairies daily. Constant quality controls from the moment the milk is delivered until the cheese is ready to eat mean that the full enjoyment of our Tilsiter is always guaranteed. Whether mild or aromatic, Red Label Tilsiter is by nature a talented all-rounder in both warm and cold cuisine.

The first climate-neutral variety cheese

In 2022, Tilsiter pioneered Switzerland’s first climate-neutrally produced variety cheese. This Red-Label (mild-aromatic) Tilsiter is made by Otto Wartmann and his sons at the original Tilsiter cheese dairy, the Holzhof, in the sixth generation. It was here at the Holzhof that the first Tilsiter saw the light of day in 1893. Today, 130 years later, this same cheese dairy is proud to call itself carbon-neutral – the first and currently the only one in Switzerland.
